Yuzu fruit is a Japanese citrus fruit variety with much more complex aromas than the southern European citrus fruits we know. The exceptionally intensive aroma, with notes of green mandarins and green pomelos, excites ambitious kitchen professionals with a completely new citrus freshness. The Yuzu powder is extracted from the juice of the yuzu fruits and therefore has hardly any bitter notes and a mild acidity. For 1 kg of powder, 7.5 l of juice is dried. It can be used in the sweet kitchen for ganaches, mousses and cream and in the spicy kitchen for marinades and sauces to flavor. Ingredients: freeze-dried yuzu juice, dextrin.
