About our Organic Cocoa Nibs:

Okay so, no joke, we though we ordered 10,000 pounds of bibs. Holy moly, did we think we were in trouble. I mean, we sell food items, and, even though there is a relationship between baby bibs and food, it's a stretch. For pete's sake we are not Anthony's Baby Clothes, who even sells bibs by the pound!?!

Oh boy, the brass was relieved when they realized we had actually sourced high quality cacao nibs. Our cacao nibs are a naturally rich supply of antioxidants, including flavonoids and polyphenols, and it's an excellent source of dietary fiber.

For a little insight into how they get from farm to your door, after the harvest, the organic cacao beans are removed from their pods, fermented for 5 to 8 days, then dried. The beans are then sorted, cleaned, pre-roasted, de-shelled and then broken into nibs.

Cocoa nibs are simply broken up cocoa beans. They’re basically chocolate in it’s purest form. Our cocoa nibs are organically grown and batch-tested gluten-free. They’re also full of vitamins and minerals, and make a great crunchy addition to tons of different recipes.

Add a couple tablespoons of cocoa nibs to your morning oatmeal, to a trail mix, to homemade snack bars, or even a batch of brownies! There’s no end to the ways you can use this nutritious ingredient.

 

Cookie Dough Bars

Ingredients:

  • 1/3 cup Anthony's Organic Extra Virgin Coconut Oil, melted
  • 2/3 cup cashew milk or other milk of choice
  • 1/3 cup Anthony's Erythritol
  • 1-2/3 cup Anthony's Almond Flour
  • 1/2 cup Anthony's Coconut Flour
  • 3 tablespoons Anthony's Cocoa Nibs
  • Dash salt
Instructions:
  1. In a mixing bowl, combine the coconut oil, milk, and erythritol.
  2. Mix in almond flour, coconut flour, cocoa nibs, and salt.
  3. Press into an 8" by 8" glass baking dish and chill until set.
  4. Cut into bars and enjoy.

Prep time: 10 minutes
Yield: 9 bar

 

Chocolate Mocha Brownies

Ingredients:

  • 1-½ cups Anthony’s Blanched Almond Flour
  • 2 tablespoons + 3 tablespoons Anthony’s Coconut Oil, divided
  • ? cup Anthony’s Cocoa Powder
  • ½ cup Anthony’s Erythritol or Cane Sugar
  • 2 tablespoons Anthony’s Instant Coffee
  • 1 egg
  • 1 egg yolk
  • 3 tablespoons coconut milk
  • ¼ teaspoon Anthony’s Xanthan Gum
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda
  • 2 tablespoons Anthony’s Erythritol or Cane Sugar for topping
  • 2 tablespoons Anthony’s Cacao Nibs
Instructions:
  1. Preheat oven to 350° Fahrenheit and grease a 8”x8” glass baking dish.
  2. In a food processor, combine the almond flour and 2 tablespoons of coconut oil.
  3. Process until a smooth butter forms.
  4. Transfer to a small saucepan and add the additional 3 tablespoons coconut oil, cocoa powder, and erythritol or sugar.
  5. Heat and stir over medium-low heat just until melted and mixed.
  6. Transfer to a mixing bowl.
  7. Add the instant coffee, egg, egg yolk, coconut milk, xanthan, salt, and baking soda; mix well.
  8. Transfer to prepared baking dish and sprinkle with 2 tablespoons erythritol or sugar and cacao nibs.
  9. Bake for 20-25 minutes and cool.

Prep time: 15 minutes
Cook time: 25 minutes
Yield: 9 serving

Chia Pudding Brownie Dessert Parfaits

Ingredients:

Pudding

  • 1 cup coconut milk
  • 1/2 cup cashew milk, rice milk, or regular milk
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons Anthony's Cocoa Powder
  • 1/3 cup Anthony's Chia Seeds

Brownie Crumbles

  • 1 cup Anthony's Almond Flour
  • Pinch salt
  • 1/4 cup Anthony's Cocoa Powder
  • 1/4 cup honey
  • 3 tablespoons Anthony's Cocoa Nibs
  • 1/3 cup Anthony's Organic Extra Virgin Coconut Oil, softened

Instructions:

Pudding

  1. In a mixing bowl, combine all pudding ingredients and mix well. 
  2. Let sit to thicken while you prepare the brownie crumbles.

Brownie Crumbles:

  1. Combine all brownie crumble ingredients and mix well.
  2. Pop the bowl in the freezer to let the brownie crumbles firm up.

Assembly:

  1. In small dessert cups, alternate layers of pudding and brownie crumbles.
  2. Enjoy!

Yield: 3 servings
