A true sherry vinegar can only be produced from wine made from palomino fino grapes, grown in the unique microclimate of the Jerez (sherry) region in Spain. The exceptional quality of our sherry vinegar can only come from the finest ingredients the first pressed sherry wines known as vinos de yema. Slow and careful preparation through a solera system and prolonged aging in oak barrels, produces this mature, complex vinegar with an incomparable flavor, aroma, and color. Blend with Spanish olive oil, minced shallot and dijon to dress vegetables, meats and poultry. This time honored aging and blending process ensures that quality vinegar is produced consistently from year to year. To earn the reserva distinction, the vinegars must be aged in oak casks for at least two years. The Arvum solera is more than 10 years old.
