Egg Fettuccine

Along with what you love most about pasta, De Cecco has added eggs. The uncompromising method of making durum wheat semolina pasta is exactly the same one used in all the stages for producing Egg pasta. In keeping with tradition, De Cecco Egg pasta is made with fresh category A eggs from free-range hens and fresh, top quality semolina obtained from the wheat germ which is the best and most nourishing part. All the ingredients are skillfully combined, then the dough is drawn through bronze plates to create a rough surface on the pasta which will then absorb sauces better. Lastly, it is dried slowly at a low temperature which is essential for maintaining the texture, appearance, flavour and aroma of the raw materials, as well as preserving the protein and gluten content along with the typical pale yellow colour of the wheat.


Wheat Selection We select the best 'grano duro' (durum wheat) and extract the core, the purest part of the wheat, to retain all the nutritional value and a signature pasta with the distinctive and unique De Cecco taste and the superior cooking performance renowned among all the best Chefs in the world.	Cold Spring Natural Water We knead our semolina with cool spring water from the National Park of Majella at a temperature of less than 59° F to ensure our pasta maintains its firmness after cooking.	Bronze Drawplates We shape our pasta through bronze drawplates to provide a rough surface similar to homemade pasta to better capture and retain sauce.	Low Temperature and Slow Drying We dry our pasta slowly at low temperature to preserve both the original color and flavor of our durum semolina as well as retain all the nutritional value.

Fettuccine With Brussels Sprouts And Anchovies

Ingredients (for 4 servings)

- 12 ¼ oz De Cecco Fettuccine

- 7 oz anchovies

- 5 1/3 oz Brussels sprouts

- 3 tbsp extra virgin olive oil

- 2 shallots

- 1 parsley bunch

- salt & pepper

Preparation

Clean the anchovies, slice into fillets and chop into bits.
Clean the Brussels sprouts blanching the tender leaves in boiling salted water.
Peel and chop the shallots, the parsley; sauté the shallots in a saucepan with oil until soft
Add the sprout leaves, season with salt and pepper and cook or 3-4 minutes.
In a nonstick pan, brown the anchovy fillets for 4 minutes.
In the meantime, cook the pasta in plenty of salted water
Drain and pour it into the pan with the sprouts; add the anchovies
A couple of tbsp of the pasta's cooking water stir well and sprinkle with parsley
