You’ve heard of them roasting on an open fire. You’ve seen them on street carts in New York in the winter. But have you ever really wondered what to do with chestnuts? The fragrant nut (yes, it’s actually a nut) is a cold-weather favorite but Gefent chestnuts are perfect year round! Roasted, peeled and ready to eat (they make a great snack) or use in recipes. Whether snacking, cooking or baking, it’s hard to go wrong with the delicious easy to use Gefen Chestnuts.
Ingredients
This simple recipe is perfect for cold nights and very easy to make. Start by sauteing onions, carrots and celery in the oil till soft. While vegetables are sauteing, warm stock. in a blender, combine sauteed vegetables, warm stock, Gefen Chestnus and thyme. Blend till smooth, return to pot, season with salt and pepper add cream (optional) and simmer for 10 min.
In a saucepan over low heat, combine butter, sugar, salt and vanilla. Stir till sugar is dissolved, being careful not to burn. Remove from heat and pour over chestnuts, stirring to coat. Spread evenly on a baking sheet coated with parchment paper. Bake for 10 min at 350F, remove and cool.
