Why is the Date Lady so obsessed with dates?

Colleen's love for dates started when she and her family journeyed to the Middle East. Largely unknown in the U.S., dates were everywhere. After a couple years of bringing home suitcases of dates and date syrup, they realized the only way they could have a running supply would be to create her own company. After a lot of determination, Date Lady was established in May 2012.

Chocolate Covered Peanut Butter Eggs

Ingredients:

2/3 cup of creamy peanut butter
1 Tbsp Date Lady Date Syrup
2 Tbsp Date Lady Date Sugar
3/4 cup of chocolate chips
Sea salt to taste

Method:

Mix peanut butter, date syrup and date sugar together. Form the mixture into egg shapes and flatten the top.
Place in fridge for 10 minutes before dipping into the melted chocolate.
Melt chocolate over low heat and remove just before chips have lost their form. (You don't want to over cook the chocolate.) and Dip the peanut egg into the chocolate and coat all sides. Place on wax or parchment paper until set. While chocolate is still soft, sprinkle Maldon sea salt on the top.
